What you learn

A simple, friendly class adapted to your level and to what you like to eat.

The dishes

  • Chicken tagine with olives and preserved lemon
  • Lamb tagine with prunes or vegetables
  • Friday couscous
  • Msemen and baghrir for breakfast

The know-how

  • Choosing and measuring spices: ras el-hanout, cumin, saffron, ginger
  • Preparing and cooking a tagine without burning it
  • Rolling semolina and steaming couscous
  • Stretching msemen dough by hand
  • Serving mint tea the proper way

How the class works

The market

On request we start with a walk to the Bab Doukkala neighbourhood market to pick vegetables, herbs and spices.

In the kitchen

You cook with Mme Sinan in the riad's kitchen. All equipment and ingredients are provided.

At the table

You then taste your dish in the patio or on the terrace, with bread, salads and mint tea.

Practical

Allow about 3 hours. The class is held in French, Arabic or simple English, from 2 people, and is best booked 24 to 48 hours ahead. The price is confirmed when you enquire.

Food

Would you rather simply have dinner at the riad?

Mme Sinan also cooks dinner on request: tagines, couscous, pastilla and skewers, from €15 to €25 per person.

Is the cooking class private?

Yes, the class is private, with you and the people travelling with you, in the riad's kitchen.

Do I need to book the cooking class in advance?

Yes, ideally 24 to 48 hours ahead so we can shop for fresh produce. Write to us on WhatsApp or by email.

Can we cook vegetarian?

Of course. Tell us what you do not eat and we adapt the recipes, in particular the vegetable tagine and couscous.
